The apple TV is just a cheap computer; however, using Linux, this would become one hell of a machine :) Cheap, energy-efficient, ... The linux kernel already runs !

Here's some documentation on reskinning the FrontRow interface to look more like the AppleTV UI.

Supposedly, Apple's lawyers have given the author a C&D for images and assets that were posted to make this easier. No reason you can't retrace his steps and do it yourself, though.

A comprehensive howto on getting the AppleTV software to run on an Intel mac in place of FrontRow (or the Finder if you desire).

This includes tricks for making it load local media and quit with a specific mouse click (normally there is no way to exit the apple tv app).

A number of patches and hacks for the AppleTV, including a patch that bypasses the device's USB whitelist, allowing non-stock peripherals like USB drives and keyboards to function.

Check out this quick article on engadget and click through the LONG slide show depicting the "opening of the appple TV device." Just looking at the packaging and simplicity of the whole thing make me want it all the more.
